1 Tablespoon canola oil
2 Tablespoons butter, unsalted, divided
1 large onion, chopped
1 shallot, chopped
3 stalks celery, sliced
3 large carrots, diced
1 teaspoon You Have Arrived Savory Provence Seasoning Blend
1 pound cooked ham, trimmed and cubed
3 (15-ounce) cans Great Northern beans, canned, drained and rinsed
1 (32 ounce) box chicken broth, reduced sodium
1 bay leaf
ground black pepper, to taste

In a large heavy stockpot or Dutch oven heat the canola oil and 1 tablespoon of butter over medium-high heat. Add the chopped onion, shallot, celery, carrots, and You Have Arrived Savory Provence Seasoning Blend. Cook and stir for about 10 minutes, or until vegetables are tender. Add the diced cooked ham, the drained and rinsed Great Northern beans, and bay leaf. Reduce heat to a slow simmer and cook for 20 minutes for flavors to marry. Remove from heat. Add remaining 1 tablespoon butter and season with pepper, do not add salt. Remove bay leaf. Serve warm, 1 cup per person.

Wow, what a delicious menu of ham and white bean soup. But it is important that food should be healthy. Tasty but not healthy we must avoid. Do you agree that?
