One of my favorite things about spring is the variety of fresh berries and vegetables that come to the markets. After a long winter of cooking from the pantry I welcome the light freshness of asparagus and strawberries and baby lettuce and such. There is just something about this time of year that renews my interest in cooking. Today in the digest we spend a few moments refreshing our memory on how to find a good Day 6 recipe that supports our healthy weight management goals. The more we work toward being masters over what we cook and how we cook the more successful we can become at managing our weight and hopefully improve the health and nourishment of those we love.

Easy Chicken Florentine Soup
Here is a hearty chicken soup that is full of nutrients from complex carbs -- Vegetables! Making use of a rotisserie chicken and veggies from the frozen foods department helps put this meal in a pot together in a split second. Great for busy weeknights but don't hang your head in shame if you want to serve this to guests. They will love it too! Enjoy.
Easy Chicken Florentine Soup
Ingredients:
1 Rotisserie Chicken, skin and bones removed and meat cut into bite size pieces
16 cups (2 boxes) reduced sodium chicken broth
2 (16-oz.) packages frozen mixed oriental vegetables
1 (10-oz.) package frozen chopped spinach
2 teaspoons no-sodium all-purpose seasoning (I used the You Have Arrived Signature Blend)
Directions:
In a large dutch oven bring all ingredients to a boil. Lower heat and let simmer for 10-15 minutes. Ladle 1 cup servings into bowls and serve warm. Sprinkle with shredded cheese if desired. About 100 calories per serving and 23g Protein.

Pasta with Tomatoes & Goat Cheese

I think we are all familiar with classic macaroni, pasta or potato salads that are heavy on starch and light on vegetables or complex carbohydrates. While no doubt these are enjoyable to eat they leave us feeling heavy, sleepy, and bloated. In many cases they lead to discomfort and possibly dumping in gastric surgery patients. I have learned that in changing the ratio of starch and complex carbohydrates we can enjoy the mouth-feel of pasta or potatoes without the heaviness of a traditional classic side-dish salad. This recipe for Pasta with Tomatoes & Goat Cheese is adapted from a long-since-lost issue of Gourmet magazine. I enjoy mixing it up with whatever fresh produce and cheese is available and I think you will too. Use this recipe as your template and mix-it-up to suit your palate. Just remember to keep the ratio at 2 parts complex carbs (veggies) to 1 part starch. Use a whole grain pasta to sneak a few grams of vegetable protein in your diet as well! CHEERS!
Ingredients:
1 pound pasta of choice
2 3/4 pounds fresh cherry tomatoes, assorted colors and flavors, cleaned and rinsed
4 ounces soft mild goat cheese, crumbled
1/2 cup freshly torn basil leaves
2 Tablespoons olive oil
1-2 teaspoons You Have Arrived Finishing Salt
Cook pasta according to directions in boiling salted water just until done, then drain. Do not rinse.
In a large bowl toss warm pasta with tomatoes, crumbled goat cheese, basil leaves and olive oil and allow warm pasta to melt cheese. Taste for flavor and season with You Have Arrived Finishing Salt as needed. Serve warm or cold.
Try this: Mix 2 parts veggies with 1 part pasta and toss with homemade vinaigrette for a great side dish salad that will keep you on track!

Lemon Chicken Soup: Comforting & Delicious
I found this recipe in Prevention magazine and was intrigued by the addition of two eggs at the end of cooking. This method is similar to egg drop soup but I had never considered adding an egg to a more hearty soup. The result was a fresh and light chicken soup with a creamy texture thanks to the addition of eggs. Each 2-cup standard serving has 49g protein so a WLS portion of 1-cup has about 25g protein. Not too shabby when you balance that against the 16g of complex carbs you will enjoy when eating this hearty soup. Give the recipe a try - I think you will find it has everything you need for a best-nutrition meal and a comfort meal in one lovely warm bowl of soup.
Lemony Chicken Soup
Serves 4 (2-cup) Servings
Ingredients:
1 teaspoon olive oil
1 small clove garlic, minced
6 cups chicken broth, reduced sodium
1 rib celery, chopped
1 cup shredded carrots
1/2 teaspoon ground black pepper
1/4 teaspoon salt
1/2 cup orzo
2-1/2 cups frozen green peas or beans
3 cups chopped cooked chicken
2 large eggs
3-4 Tablespoons freshly squeezed lemon juice (1 large lemon)
Directions:
Heat olive oil in a Dutch oven over medium heat. Add garlic and cook until light brown, about 1 minute. Add broth, celery, carrots, pepper, and salt and bring to a boil over high heat. Add orzo and reduce heat to a simmer. Cook until orzo is tender, about 8 minutes. Add peas and chicken and simmer 2 minutes. Meanwhile whick eggs and 3 tablespoons of the lemon juice in medium bowl. Temper egg mixutre by whisking in about 1 cup hot broth in a thin stream. Whisk egg mixture into soup and warm briefly over low heat, 2 minutes. Do not boil or eggs will curdle. Adjust seasoning as needed with more lemon juice, salt, or pepper and serve.
4 (2-cup) servings. Per serving: 424 calories, 49g protein, 10g fat, 32g carbohydrate and 4g dietary fiber. Remember, weight loss surgery patients should carefully measure a 1-cup serving and avoid drinking liquids when eating meals. This helps us feel full longer and gives our body more time to digest and absorb nutrients.

Don't Stress Over Carbs & Still Lose Weight
Are you confused about the role of carbohydrates in your post-Weight Loss Surgery diet? You are not alone. Of the three food nutrients (protein, fat, carbohydrates) carbs confuse us the most. Even the bariatric professionals cannot agree on the role of carbohydrate in the high protein diet most commonly prescribed to patients of gastric bypass, adjustable gastric banding (lap-band) and gastric sleeve.

It is popular in the health and nutrition fields to describe carbs as "good carbs" or "bad carbs". I prefer not to use those words because they assign a moral trait to food and food does not have moral traits. Food is food. When we remove moral assignment from the food we eat we can be smart, thoughtful, and rational with our choices. But if we assign morals to food and eat "bad carbs" then we must be bad. You know the self-blame cycle I'm talking about.
Instead of good carbs and bad carbs I prefer to use more accurate terms:
- Fruit and Vegetable Carbs or Complex Carbs
- Grain and Starch Carbs or Complex Carbs
- Processed Manufactured Carbs or Simple Carbs
