Here is a hearty chicken soup that is full of nutrients from complex carbs -- Vegetables! Making use of a rotisserie chicken and veggies from the frozen foods department helps put this meal in a pot together in a split second. Easy Chicken Florentine Soup
Ingredients:
1 Rotisserie Chicken, skin and bones removed and meat cut into bite size pieces
16 cups (2 boxes) reduced sodium chicken broth
2 (16-oz.) packages frozen mixed oriental vegetables
1 (10-oz.) package frozen chopped spinach
2 teaspoons no-sodium all-purpose seasoning (I used the You Have Arrived Signature Blend)
Directions:
In a large dutch oven bring all ingredients to a boil. Lower heat and let simmer for 10-15 minutes. Ladle 1 cup servings into bowls and serve warm. Sprinkle with shredded cheese if desired. About 100 calories per serving and 23g Protein.
