Easy Chicken Florentine Soup

Here is a hearty chicken soup that is full of nutrients from complex carbs -- Vegetables! Making use of a rotisserie chicken and veggies from the frozen foods department helps put this meal in a pot together in a split second. Great for busy weeknights but don't hang your head in shame if you want to serve this to guests. They will love it too! Enjoy.

Easy Chicken Florentine Soup

1 Rotisserie Chicken, skin and bones removed and meat cut into bite size pieces
16 cups (2 boxes) reduced sodium chicken broth
2 (16-oz.) packages frozen mixed oriental vegetables
1 (10-oz.) package frozen chopped spinach
2 teaspoons no-sodium all-purpose seasoning (I used the You Have Arrived Signature Blend)

In a large dutch oven bring all ingredients to a boil. Lower heat and let simmer for 10-15 minutes. Ladle 1 cup servings into bowls and serve warm. Sprinkle with shredded cheese if desired. About 100 calories per serving and 23g Protein.
