Corned Beef & Food Safety

Happy St. Patrick's Day! Many of us will be preparing and serving corned beef in celebration of St Patrick's Day today. As a quick refresher here is the US Department of Agriculture's Fact Sheet on Corned Beef and Food Safety. Make sure you are familiar with all safety measures to avoid any unpleasant food incidents that would disrupt your celebrations! Have a great day!


Corned Beef and Food Safety

For USDA's Meat and Poultry Hotline, the approach of spring usually means that St. Patrick's Day dinner preparations across the country will spark many questions about the safe handling, storage and preparation of corned beef and all the trimmings. But food safety involves more than the "luck of the Irish."

What is "corning"?
Corning is a form of curing; it has nothing to do with corn. The name comes from Anglo-Saxon times before refrigeration. In those days, the meat was dry-cured in coarse "corns" of salt. Pellets of salt, some the size of kernels of corn, were rubbed into the beef to keep it from spoiling and to preserve it.

Today brining—the use of salt water—has replaced the dry salt cure, but the name "corned beef" is still used, rather than "brined" or "pickled" beef. Commonly used spices that give corned beef its distinctive flavor are peppercorns and bay leaf. Of course, these spices may vary regionally.

Package Dating and Storage Times
Uncooked corned beef in a pouch with pickling juices which has a "sell-by" date or no date may be stored 5 to 7 days in the refrigerator, unopened. Products with a "use-by" date can be stored unopened in the refrigerator until that date.

Drained and well wrapped, an uncooked corned beef brisket may be frozen for 1 month for best quality. It's recommended to drain the brine because salt encourages rancidity and texture changes. The flavor and texture will diminish with prolonged freezing, but the product is still safe. After cooking, corned beef may be refrigerated for about 3 to 4 days and frozen for about 2 to 3 months for best quality.

Preparation
Corned beef is made from one of several less tender cuts of beef like the brisket, rump or round. Therefore, it requires long, moist cooking. Keep food safety in mind when preparing corned beef. It can be cooked on top of the stove or in the oven, microwave or slow cooker.

Corned beef may still be pink in color after cooking. This does not mean it is not done. Nitrite is used in the curing process. This fixes pigment in the meat and affects the color.

Allow the brisket to stand for about 10 minutes after removing from the heat. This will make it easier to slice, and it is best sliced diagonally across the grain of the meat.

Cooking
The USDA does not recommend one particular cooking method as best. Following are methods from various sources. The cooking times are based on corned beef that is not frozen at the time of cooking. "Fork-tender" is a good indication of doneness, but use a food thermometer to be sure. For tenderness and texture, cook until the corned beef reaches a safe minimum internal temperature of 160 °F or above.
  • OVEN: Set the oven for 350 °F or no lower than 325 °F. Place brisket fat-side up. Barely cover the meat with water—about 1 inch—and keep the container covered throughout the cooking time. Allow about 1 hour per pound.
  • STOVE: Place brisket fat-side up in a large pot and cover it with water. Bring the water to a boil; then reduce the heat and simmer, allowing about 1 hour per pound. Vegetables may be added during the last 20 to 30 minutes of cooking. Cook vegetables to desired tenderness.
  • SLOW COOKER: If using root vegetables, such as potatoes and carrots, put them in the bottom of slow cooker. Place brisket on top of vegetables (if using) or in bottom of cooker. Add about 1-1/2 cups of water or enough to cover meat. Cover and cook on high setting for the first hour of cooking. Then cook for 10 to 12 hours on the low setting or 5 to 6 hours on high. Cabbage wedges may be added on top of the brisket during the last 3 hours of cooking.
  • MICROWAVE: Calculate cooking time at 20 to 30 minutes per pound. Place brisket in a large casserole dish and add 1-1/2 cups of water. Cover with lid or vented plastic wrap and microwave on medium-low (30 percent power) for half the estimated time. Turn meat over and rotate dish. Microwave on high for remainder of time or until fork tender. Vegetables may be added during the final 30 minutes of cooking.

Cooking Ahead
Some consumers prefer to cook corned beef ahead of time. It is easier to cut uniform slices when corned beef is cold. Cooking ahead also makes it easier to reheat and serve
later.

After cooking a whole corned beef, cut it into several pieces for faster cooling—or slice it, if you like. Place the beef in small, shallow containers and cool it in the refrigerator quickly.

Leftovers
Any corned beef left over from a meal should be refrigerated promptly—within 2 hours of cooking or reheating. Use cooked-ahead or leftover corned beef within 3 to 4 days or freeze 2 to 3 months.

OK so we all know that Mexican food is not the best type of food to eat. It is loaded with fat and calories...and ooo sooo good. I found another recipe and made it for dinner tonight. It is a keeper and will fulfill any jonsing you will have for Mexican food. A serving is 2 enchilada's and I ate both of them. I used the low carb taco size tortilla's so I am assuming that the carbs and calories are a wee bit less. Either way...it was within my caloric allowances.

I've been playing in the kitchen this week! I tweeked some recipes from my grandmother, Betty Crocker and Martha Stewart, then I added some LAWLS You Have Arrived Finishing Salt and ZOWIE did it turn out nice!

It's Delicious! No crust, lots of vegetables. A great Day 6 and Beyond recipe. The chicken, once pounded cooks quickly. There is no reason to pre-cook. Keeps preparation and cleanup simple.

Happy Anniversary Neighborhood!

My how time does fly! This month (March 10th to be exact) marks the 4th Anniversary of the LivingAfterWLS Neighborhood! Many of our Neighborhoods had not yet "Arrived" back in 2006 when the Neighborhood was born! And here we are today celebrating together in the common quest for health, wellness, friendship, knowledge and stewardship all sharing the common connection of weight loss surgery. The Neighborhood is billed a "Safe Haven Circle of Friends" and from behind the scenes we actively work to protect our community from invasion by hackers, spammers and those with malicious intent to harm or destroy our borders. More importantly, from the front side of the Neighborhood our steadfast citizens protect one another in a self-ordained Neighborhood Watch where Neighbor protects Neighbor and compassion is served-up kindly and regularly. It is often expressed that there is no other place like The Neighborhood on the Internet. And that, my dear friends, is because of the Neighbors, each and every one of you. I am so humbled an honored that many of you have made this your destination and your home in your weight loss surgery journey. When we first opened the community gates to the Neighborhood in 2006 I was skeptical at best and told my advisers I would try it for a year but doubted it would take hold. Now, four years later, I cannot imagine my weight loss surgery experience without the Neighborhood and without each and every one of you. Thank you for being here.

Day 6 Recipe: Chicken with Apples & Blue Cheese


The Details:

The Review:
Changed recipe slightly to use one cut-up roaster chicken rather than boneless-skinless chicken thighs (this was a better bargain in this week's grocery flier. So seasoned chicken with You Have Arrived Poultry Blend and baked in 375F oven for 35 minutes while cooking the apples/onions in skillet sprayed with cooking spray over medium-high heat. Topped with chopped walnuts and dried cranberries for nutritional boost of omega 3 fats and antioxidants. Served blue cheese crumbles on side as Jim likes a very small amount of blue cheese while I prefer a more generous amount. Delicious supper. Served green salad with apple slices, green onion, chopped walnuts and dried cranberries with choice of dressing. Full meal hitting all the necessary flavors for satiation: savory, salty, sweet, sour. A perfect Day 6 meal!!! Made my leftovers in to a take-n-go salad for today's lunch! Perfect!

    The 5 Day Pouch Test---AGAIN!

    Since the publication of the 5 Day Pouch Test plan in August of 2007 I've done the plan roughly four times a year or once a quarter. It seems contrary to what I preach --that the 5DPT is not a fad diet or a quick weight loss gimmick-- because each time as I share, online, my romp through the 5DPT it appears I do it far more frequently than I advise. Today I'm taking a moment to explain myself, to cover my tracks and to a little 5DPT talking.

    First, to keep the 5 Day Pouch Test plan fresh we need to introduce new recipes. While I can assess a recipe on paper the best way to know if it satiates the body and mind is to include it in a full run of the 5DPT. Each time I do the 5DPT there are new recipes on the menu that you may (or may not) see published in the Bulletins and in future editions of the Owner's Manual. I will never offer recipes that I have not personally tried in the actual 5DPT format, so that is one reason I need to do the test at least 4 times a year. It is more like a science experiment for me these days than a "get back on track" program because, in all honesty, I have my eating game fairly well under control. It helps having to be accountable to my LivingAfterWLS family! Thank You!

    Second, like yours, my life is a frantic world moving at rapid pace and there is a certain comfort to be found in plain old predictability. I was on the run for the first 20 days of February and while my eating did not get out of control it was not consistent or healthy. My water intake was hit-n-miss and I overlooked some vitamin doses. Looking at the calendar this week I thrilled at the prospect that I could be hopelessly boring and consistent with my meals. Protein First. Lots of Water. Warm comfort soups and soft proteins. Oh how I looked forward to pampering my pouch. At this point it isn't about losing weight or getting back on track for me; its about just slowing down, nurturing my body, taking a rest from the frantic and just being at ease with my pouch and my body. Hard to find fault with that. Like most things it is easy to say "I want to take it easy on my pouch this week," but it is another thing to say, "I want to use the 5DPT to help me take it easy on my pouch this week." Having a goal and a plan always helps us get to where we want to go.

    Finally, We are all in this together. Many people look to me for guidance as they find their way back to basics with the 5 Day Pouch Test. It is my humble honor to occasionally join so many others in this quest for better health, better control, stronger empowerment as we together make our best lives with weight loss surgery. A swim coach who never dips a toe in the water cannot understand the current against which his athletes swim. And so it goes for us, if I never do the 5DPT then I cannot understand what current others must strive to overcome. We are in this together and I'm in the thick of things with you. It is so nice for me to have you here knowing we never have to travel this journey alone.

    So onward we go! I've just finished some Tomato-Basil Carb Monster Soup and it was filling and delicious and delightfully predictable! If I sit really still I think I can hear my little tummy humming a happy tune.

    Pumpkin Shrimp Soup

    Kelly at Facebook asked for a reprint of this recipe - since I'm doing the 5DPT starting today I was glad to be reminded of another great soup. Hope you enjoy!

    Pumpkin Shrimp Soup - Another 5DPT Great!


    Day 1 & 2 Liquids
    The Low-Carb Pumpkin & Sausage Soup recipe is a favorite of seasoned 5 Day Pouch Testers. (Page 69 of the 5DPT Owner's Manual or online here: 5DPT Recipes). Recently I came across another pumpkin soup recipe that showed great promise: but first I needed to calculate the nutritionals and give it the family taste test. It is smooth as silk and delicious. The numbers are great too, being much lower in fat than the sausage recipe. Shrimp and whole milk provide protein while the pumpkin and other vegetables provide complex carbohydrates to keep the Carb Monster away. Give this refreshing change a try and I promise it will be part of your Day 6 menu rotation in the cold months to come! Enjoy!

    Ingredients:
    2 tablespoons unsalted butter
    2 medium onions, sliced
    2 medium carrots, sliced
    2 medium garlic cloves, minced
    1 teaspoon Old Bay Seafood Seasoning
    1 (14-ounce) can fat free reduced sodium chicken broth
    1 (15-ounce) can pumpkin puree, no added salt
    1 cup whole milk
    8 ounces cooked shrimp, peeled and deveined (if frozen, thawed)*
    freshly grated nutmeg for garnish, optional

    Over medium-high heat in a large soup pot, melt butter and cook the onions, carrots, and garlic, covered until tender, about 10-12 minutes, stirring occasionally. Stir in the Old Bay Seafood Seasoning and 1/2 cup of the chicken broth. Working in batches puree the cooked vegetables in a blender or food processor following safety guidelines for processing hot food (see article below). Return vegetable puree to cooking pot. (Alternatively, use an immersion blender to puree the soup).

    To vegetable puree add the remaining broth, pumpkin puree, milk and thawed drained shrimp. Heat gently to a low simmer, not boiling, and allow to cook 5 minutes until soup thickens slightly and is warm throughout. Serve immediately in measured 1 cup portions. Garnish each serving with a sprinkle of freshly grated nutmeg.

    Serves 4. Per 1 cup serving: 245 calories, 19g protein, 23g carbohydrate, 6g dietary fiber, 5g fat.

    For leftovers reheat in the microwave on low to avoid overcooking the shrimp.

    *Canned shrimp, crabmeat, or salmon would work equally well in place of the frozen shrimp if necessary. Just make sure you have 8-ounces of seafood after draining the liquid.

    Headaches With the Weight Loss Surgery High Protein Diet

    Why do we suffer from headaches when we transition from a high-processed carbohydrate diet to a high protein diet? Many weight loss surgery patients are asking this.

    There are, actually, several reasons for headaches when abiding a high protein, low carb diet. More importantly, there are several little things we can do to relieve the headaches:

    First, when we transition from a processed carbohydrate diet to one rich in protein as advised by most weight loss surgery (bariatric) doctors and dieticians we increase our intake of tryptophan. A short list of foods high in tryptophan includes cheese, meat, nuts, and soy. Ingestion of tryptophan releases serotonin in the brain, which is considered a vasoconstrictor: it tightens our blood vessels. In modest amounts this helps us feel good; but in greater amounts to which we are not accustomed it causes headaches.

    To balance the increased tryptophan (an amino acid - good thing) intake we should include appropriate complex carbohydrates in our weight loss surgery eating rhythm: 2B/1B (2 Bites Protein/1 Bite Carbohydrate). Here are some smart food choices for your weight loss surgery diet::

    Carbs:
    apples
    artichokes
    basil
    bean sprouts
    beets
    carrots
    celery
    cranberries
    cucumbers
    green beans
    pears
    spinach
    squash

    Fat:
    olive oil

    Protein:
    lamb
    lentils
    tuna
    turkey

    Next, we absolutely must be certain to supplement our diet with essential vitamins and minerals, and in this list I personally include herbal supplements that centuries of human use have proved beneficial to our health and well-being. Please review the list of supplements:

    Feverfew: 200-300 milligrams daily

    Ginger: 1,500 milligrams taken in 3 (500-milligram) doses daily

    Magnesium: 1,000 milligrams a day (WLS post-ops are known to be deficient of magnesium)

    Calcium with Vitamin D: 1,000 milligrams daily

    Vitamin B6: 50-100 milligrams daily

    Vitamin B Complex as prescribed by your doctor, oral, sublingual or injected

    If you wake in the morning with a headache I encourage you to have a serving of Emergen-C. I strongly believe Emergen-C is healthful to us because in a single dose you get 60mg magnesium, 200mg potassium; 60mg sodium; 50mg calcium carbonate; (your electrolytes); in addition to vitamin B6 and B12; vitamin C, niacin, thiamin, zinc, and few others. Our little gastric bypass and gastric-banded tummies can absorb this supplement rapidly and it is not difficult or painful to take. If you have not tried Emergen-C please do. As a note, continue your regular vitamin regimen when taking Emergen-C. Use this water soluble product to get just a little extra nutrition.

    If your headaches are chronic and you suspect more than the weight loss surgery high protein diet please keep a headache diary in an effort to identify the cause of the headaches. Dr. Alex Duarte suggestions tracking these things:

    Diet - Diet and food allergy is the most prevalent cause of headache.

    Hormones - Fluctuating hormone levels are known to cause frequent headache.

    Weather - Changes in barometric pressure and other weather conditions can trigger headaches.

    Stress - Frequent cause of headaches.

    Change in Routine - Disruption of regular routine (such as change in diet) is known to cause headache.

    Dental Problems or Endodontic surgery are known to cause headaches

    Sensory Stimuli - sight, smell, and hearing can cause headaches.

    Hypoglycemia causes headache.

    Herbal remedies for headaches are, in my opinion, more effective and less disruptive than chemical OTC remedies. Try supplementing your diet with Feverfew, Ginger, Ginko Biloba, Chamomile, Capsaicin, and/or Valerian.

    I'm going to give you and assignment and because I know you do very well with specifics I will be very detailed with this assignment. Are you ready for the challenge? OK, take a moment before you continue reading this and think about all the reasons why you can do this assignment. Do not allow one single "I can't do this" thought into your beautiful brain, ok????

    The assignment:
    Please go to your grocery store and purchase two items:
    1 quart of fresh strawberries (they are looking really good this time of year)
    1 jar sugar free chocolate syrup (or 1 bar of 70% cocoa dark chocolate)

    Next - think about these beautiful berries that are full of vitamin C, fiber and carcinogen fighting phytochemicals. Putting these strawberries in your body is a nurturing gift. Think about that today, but don't eat the strawberries just yet. Just focus on how sweet and succulent they will taste and how you will kindly nurture your sweet cravings with this wonderful food. Think about how you will feel as you eat them and how you will feel in the morning knowing you did not give you body food that made it sick and sluggish. Remind yourself that you deserve to feel healthy and in control of your eating and you are capable of being healthy and in control of your eating.

    What you are doing is creating that "mental storm of enthusiasm" for nurturing your body with smart food choices.

    Now, tonight when the sweet craving hits I want you to wash 6 strawberries in cold running water. Dry them gently with a paper towel and arrange them on a pretty plate. If they are large cut them in bite-size slices. Drizzle them with the sugar free chocolate syrup -- not too much -- just a drizzle. Then find a comfortable place without distractions to sit and enjoy each bite. If you like, invite your boyfriend to join you with YOUR refreshment and kindly ask him to respect you by not having his chocolate in front of you. Enjoy every single bite and reflect on how good it feels to treat yourself in a nurturing and healthy manner.

    This is a treat and a ritual you can do every night. If you chose to get dark chocolate instead of the syrup just melt one or two ounces on low in the microwave and dip your berries into the creamy chocolate that is actually low in sugar and rich in antioxidants.

    Weight Gain After Weight Loss Surgery:
    Four Things You MUST Know

    I was born with the disease obesity and by the time I was out of college it had advanced to morbid obesity. At age 33 my disease was treated with laparoscopic gastric bypass surgery which affected a loss of weight that put my disease, morbid obesity, in remission. Three years later I suffered a relapse of my disease with a weight gain of 20 pounds. Through dietary and lifestyle compliance, much like a person with heart disease who suffers a relapse, I was able to put my disease, obesity, back in remission. I will always have the disease of morbid obesity and am fortunate that I was able, at a young age, to be treated with the best medically available option.

    The Facts:

    * Obesity is a disease.
    * Weight loss puts the disease in remission.
    * Weight gain puts the disease in relapse.
    * Like most diseases, victims of obesity are responsible to make dietary and lifestyle changes that work with medical treatment to keep our disease in remission.
    * Like most diseases, relapses occur, obesity manifests relapse in weight gain.
    * We are not the disease, we have the disease.

    My Four Truths:

    Regain Is Likely: It is generally believed that 80% of people who undergo WLS will experience relapse (weight gain) of 10-30 pounds depending upon initial weight loss. It is further believed that 20% will relapse to their former weight and possibly gain more as the disease of morbid obesity advances. This relapse can be the result of failed gastric surgery (the surgery was improperly performed); a non-compliant patient who does not evolve their eating and exercise habits; the active intestine becoming more efficient at absorbing calories; and potential stomach pouch stretch. Statistics are not available indicating which patient regains weight for what reason.

    Dr. Anita Courcoulas, chief of minimally invasive bariatric and general surgery at the University of Pittsburgh Medical Center said, "Regaining weight down the road is a common phenomenon for weight loss patients. These patients need to be educated and prepared for it if it happens."

    2. 100% Conviction: It is my experience that 100% of patients who take to the operating table for the treatment of their disease say, "I'm not going to be one of "those people" who gain weight after surgery." You can bet the farm I said that - and imagine my embarrassment and shame when I did in fact become one of "those people." At the time I didn't understand my disease had relapsed, in part because I had loosened my newly evolved eating and exercise habits, but also because my body has a disease that wants to store excess fat. I thought I gained weight because I was a failure at surgery . Just one more diet I couldn't get right.

    I am not alone in my feelings of failure over weight regain. Dr. Courcoulas said, "These are people who feel that they have failed at everything they tried in their lives. If they feel that they are failing surgery, they're embarrassed and they don't want to come back for help." How sad for us. When a cancer patient suffers a relapse do they take it as a personal failure? I sure hope not.

    Popular media perpetuates the belief that weight gain equals failure. WLS celebrities are splashed across mainstream media and tabloids alike for weight regain. But the celebrity with cancer who suffers relapse? Charity benefits are hosted bearing their name and their bravery is lauded. With a relapse in obesity the celebrity becomes the brunt of jokes for late night comedians. No wonder we don't want to become one of "those people" but statistics are not on our side
    3. I Am Not Obese. Since kindergarten the word "fat" defined me and I actually thought that was who I was because "You are fat" and "I am fat" were constant words in my world. By about age 40 I finally figured out that I am not fat. I have obesity, a disease. Have you heard a heart attack patient say, "I am heart disease" or a leukemia patient say, "I am cancer"? We are not the disease! We have a disease that is part of the whole person that makes us the wonderfully unique and powerful person we are. I must actively engage in mindful thinking daily to assure myself the things that I am that are not about my disease. The old self-loathing talk is much easier to indulge, we are so much more comfortable with it than self-kindness. But please join me in stepping out of your comfort zone and celebrating all the brilliant wonderful things that define you. You are not these disease. You are lovely spectacular beautiful you.
    4. Relapse to Remission: Just like other disease, obesity relapse can be put into remission. There is hope! As noted above there are (at least) four reasons for relapse including: failed gastric surgery (the surgery was improperly performed); a non-compliant patient who does not evolve their eating and exercise habits; the active intestine becoming more efficient at absorbing calories; and potential stomach pouch stretch. Keeping in mind that statistically weight regain is likely, that you are not a failure, and that you are not the disease, you can pragmatically go about mapping a plan to fight your relapse.

    * Seek medical help and treatment: you are fighting a killer disease
    * Assess your eating and exercise evolution and return to the lifestyle prescribed at the time of surgery
    * Educate yourself on nutrition, physical and spiritual health so they may work in harmony to heal your body
    * Seek support, family, friends, community, and fellow patients to help maintain your personal motivation
    * Educate others to stop the ignorance and blame and promote the understanding of this illness we are fighting

    3 Tips for 5 Day Pouch Test Success

    People who have undergone weight loss surgery and later gain weight are often told to "get back to basics" but we are seldom given more in depth directions. I was told that when I reported a weight gain to my bariatric center. Many of us have feelings of hopelessness: we are lost without a place to begin the act of losing weight again.

    Over the years with much trial and error I developed what is now internationally known as the 5 Day Pouch Test. In addition to following the food plan there are three key things we can do to make sure the plan is a success:

    Plan Ahead - Do Not Leave it to Chance

    Read, study, and understand the plan completely before you begin. Plan for five days with limited disruptions including life, work, and cyclical (menstruation). Create a meal plan for all five days and purchase the food to avoid tempting trips to the market. In advance cook a pot of Carb Monster soup and divide into 1-cup portions. Mentally excite yourself over the opportunity to make new friends with your old pouch. Prepare for carbohydrate withdrawal by having fruit on hand or a supply of Emergen-C. Announce your plan to those who will support you and ask for their encouragement. Visualize feeling wonderful over your 5 day rescue and redirection mission. Plan to succeed and you will.

    Please do not stop reading, I know keeping a food and exercise log is inconvenient. But it is a waste of five days if we do not make a record of what happens and learn from that record. The two-page journal is not complicated. You track your food, activity, motivation, and energy levels. You record your weight. In so doing you learn how your eating and activity affect your daily function. You identify hunger trends and also learn how, with the 5DPT you arrested them, and you have a marker for making your Day 6 plan.     Get a Buddy

    Do not go alone. Get support. Get a partner. Get a buddy. I am repeatedly impressed by the momentum of the buddy system when people do the 5 Day Pouch Test. Almost like spontaneous combustion in The Neighborhood a group will organize and do the 5DPT together. And people who are not doing it join to cheer along their fellow Neighbors. Others report tremendous success when joined by a spouse, a friend or fellow support group member. Buddies offer support, encouragement, and accountability. Do not go alone.

    Don't use the 5 Day Pouch Test as a Fad Diet

    When I began developing what became the 5 Day Pouch Test the least of my worries was losing weight. I wanted to know if my pouch still worked or if I had ruined my tool forever. Next, I wanted to arrest the eating behavior that felt so destructive and so much like before surgery when I fork-fed my way into morbid obesity. Finally, I wanted to follow my surgeon's directions and "get back to basics" - I just needed to figure out how to do that.

    With much trial and more error I finally honed in on what became the 5DPT. Over the course of five days it advances through the stages of WLS post-op eating and effectively breaks the commonly reported carbohydrate addiction we tend to fall into. Most importantly, it is a refresher lesson in the oddly effective rules that keep our stomach pouches in tip-top shape and working as they are intended to work. It is a wake-up call that in most cases the pouch is still working and when we follow the rules the tool does its job.

    The plan was never intended to affect weight loss in five days. That is stated multiple times in the Owner's Manual, on the 5 Day Pouch Test website and in the Neighborhood.

    The plan is like an airbag you hope you never have to deploy because it means you are in an emergency situation requiring extreme action to protect you. But if you find yourself in trouble wouldn't you rather have an airbag you can count on to save you from harm?

    Many people do in fact report weight loss during the five days; some significant weight loss. That is a wonderful motivational by-product of the 5 Day Pouch Test plan. But more rewarding is the spirit of empowerment that comes from knowing our pouch still works and we are capable of following the very rules that helped us lose weight after surgery.

    The smart people use this momentum to continue following the Four Rules, the liquid restrictions, avoiding slider foods, and making good sound decisions so they do not need to employ the 5DPT airbag again.

    Greedy people, hungry for more weight loss, disregard the lessons learned and hop on the 5DPT-do-over wagon hoping to flush away more weight.

    The good news is there are more smart people embracing the full program of the 5 Day Pouch Test than there are greedy people. I honestly believe none of us went into surgery thinking we would be the one to regain lost weight. None of us wants to fad diet, we are over that. But we do get off track and we do need to have a "back to basics" plan to get back on track. Often our centers are vague with advice and we feel foolish begging for answers. That is how I felt when I went to my center for help. And that is why I share the 5DPT with the world because I do not want anyone to feel foolish and left without hope.

    I encourage you to take the plan as a whole and make it your great start to 2010. Get back on track and celebrate the basic principals that, once we appreciate them, are not so difficult to follow. Below I've listed three of the best things you can do with the plan so that you own it and it becomes your victory giving you momentum to go further and better than you ever dreamed.

    Dietary Sugar & Mental Illness Connection

    Is Dietary Sugar Driving You Nuts?

    Highly respected researcher Malcolm Peet has come across an extraordinary link between dietary sugar consumption and mental illness. This British psychiatric researcher has done an extensive analysis which proves a strong link between foods that contain sugar or convert to sugar in the body and the risk of developing both schizophrenia and depression.

    According to his research, there are two ways that in-body sugar can influence mental health in a toxic way. As he reported in Psychology Today, first, sugar can suppress the activity and function of an important growth hormone in the brain called BDNF. This hormone regulates the health, functioning and maintenance of neurons within the brain. It also promotes new neuronal connections in the brain which support optimal memory function. BDNF levels in the brain are severely low in schizophrenia and depression. If sugar and sugar-forming foods are added to the diet, it can potentially bring on these conditions or make them worse. These two conditions very often result in shrinkage in the brain in areas which are affected by either depression or schizophrenia. In other word, brain damage can result.

    Secondly, Peet discusses how sugar and sugar-forming foods triggers glycation in the body which contributes to a whole litany of chemical reactions that promote chronic inflammation. This is a different type of inflammation than results when the body needs to heal a small scratch or an insect bite. A little inflammation is necessary in the short term to trigger an appropriate immune response to heal a wound.

    In the long term, a continuously irritating inflammation response in not a good thing, it actually disrupts the normal functioning of the immune system by making the various types of white blood cells lazy and unresponsive, in addition to causing problems in the brain.

    There is increasing scientific evidence that inflammation is responsible for a whole string of serious and chronic illnesses and diseases, like arthritis, IBS, diabetes, dementia, Alzheimers, auto-immune diseases like Lupus, rheumatoid arthritis, Crohn's disease, not to mention gout and acid reflux. A number of mental health challenges arise as well. Even if these diseases are not yet present, scientists say the risk and the potential for them is there.

    The definition of sugar and sugar-forming foods include the actual sugar itself, in addition to high fructose corn syrup, flours, refined grains, cereals, cakes, cookies, candies, chewing gum, donuts, baked goods, puddings, pastries, ice cream, and any other product containing sugar.

    Cave men didn't eat sugar, because there wasn't any for many centuries. We did have an innate sweet tooth which guided us to eat whatever fruit we could find, when it was available. Because fruit was relatively scarce or unavailable because it was too high in the trees, we didn't have a problem with our sweet taste buds. When we discovered sugar cane a few centuries back, our sweet tooth became more of a curse. We developed cravings for sweet foods or foods that turned sweet in the body causing problems with foods we were not designed to eat consistently in large volumes. If you actually start reading labels in the supermarket, you will see how many products actually contain sugar or corn syrup. Some researchers are saying that corn syrup is even more dangerous than the toxic sugars in our bodies.

    Peet suggests that as this research has come to light, he is encouraging his mentally challenged patients to cut out sugars and simple starches for a couple of weeks to see if they notice any improvement in their depressive symptoms. For the few that have had the courage and the determination of reduce their intake of sugars, breads, crackers and other refined foods, they have reported encouraging improvements in their mood, memory, mental clarity, focus and overall energy. Maybe it's time to look at how your mental state is influenced by your diet.

It just goes to show that healthy living does not have to be expensive, time consuming or icky. I am so excited for my LAWLS Neighbors to get started with these recipes - you are going to be thrilled and so will your tiny tummies and the loved ones at your tables.

    [HF] Kaye, your new book "Day 6: Beyond the 5 Day Pouch Test" was released November 30th as a follow-up to the successful 5 Day Pouch Test Owner's Manual. Why was there a need for a follow-up?
    [KB] So many weight loss surgery patients have successfully found their pouch again by doing the 5 Day Pouch Test. The question is asked time and again, "What do I do on Day 6?" So it just made sense to assess what exactly works for maintainers, for myself, what concepts are important to embrace on a daily basis to stay on track. I compare the 5 Day Pouch Test to an airbag deployment, it is an emergency measure, not something you want to deploy with any frequency. So the concept of Day 6 is to figure out what works in a real life to keep us in the safety zone but still travel the roads of life.

    [HF] So what are some of the secrets of Day 6 that keep you in the "safety zone"?
    [KB] Well, there are the obvious things such as the Four Rules and of course remembering to avoid slider foods and respect the liquid restrictions. But I introduce several new ideas I think are meaningful. The "I Heart DIET" concept really empowers us with a new way of thinking about the word diet and having a food plan. As I explain when we have a diet or food plan we generally maintain weight or lose weight. But if we have no plan that is when weight is most commonly gained. DIET is an acronym for Daily Intelligent Eating Triumphs and it plays a leading role in the Day 6 way of life for us. It's not difficult or threatening or intimidating, though, it is empowering. I think when we use I Heart DIET properly it is one of the first times in our life that we release guilt that is often associated with eating. There are many other nuggets of wisdom and inspiration I think will be meaningful to my WLS Neighbors.

    [HF] What do you love about your new book?
    [KB] Wow. Well, I love the cover Gerald designed using the rainbow concept from the LivingAfterWLS website. I love that I was able to write in the same voice I have talking to close friends, like I was really connecting with everyone who reads it. The WLS Neighbors are so important to me, so inspiring. When I sat down to write I truly imagined having them with me, there in conversation. We connect on so many levels. This was really special to me. And I love that I have learned so much from so many over the last 10 years that this was a collection of shared knowledge and experience. We understand one another and I think it shows in this book, the deep connection. And of course I loved the recipe testing we did. You were there for a few recipe tests: good friends, good food. No complaints about that!

    [HF] Is there anything you don't love about the Day 6 book?
    [KB-Laughing] Well, this project had some freaky-doodle bobbles that nearly sent me on an extended stay at the funny farm! For example, the final manuscript was sent to me for sign-off and it left from Nebraska the same day that John {Kaye's agent} had flowers direct shipped to me from Miami. The flowers arrived in Wyoming the next day, but the manuscript took 5 days to get here - both on FedEX overnight! How do you explain that except for freaky-doodle? Maybe my next book will be the "5 Day Freaky-Doodle Test!" It's easy to laugh now, but it was a long frustrating 13 weeks from the time my manuscript was finished to when I had the books in my hands.

    [HF] You mentioned the recipe testing. There is a big recipe section in this book, so will you be cooking a holiday meal using Day 6 recipes?
    [KB] Oh absolutely! I think there are 66 all-new recipes in the "Cooking with Kaye" section. Let's see what I can think of off the top of my head. For a holiday brunch Scandinavian Scrambled Eggs would be perfect. So rich and creamy and easy to make ahead, add some fresh fruit and you have a perfect holiday brunch. There is a broiled halibut with savory Provence butter: elegant & delicious. I think there is a tomato basil salad that would look very Christmassy and go with any lean protein. And if you can find fresh strawberries the perfect dessert is the Strawberries Romanoff. Anyone who serves this is going to look like a culinary rock star! Oh, I could do several holiday meals from this book!

    [HF] What is the most important message you want your readers to get from the Day 6 book?
    [KB] Well, the first most important message is from my heart, that each and every WLS Neighbor matters and they are not alone. I hope that message is clear with my words because I wrote from my heart. The next most important message is the power of knowledge. I think we were not told quite a few things before surgery and if they were explained to us we would be more successful with our surgery. I used the book to explain some things we need to know like why we get in the habit of slider foods, why carbonation is bad, why alcohol affects us so differently. Things like this. Nobody really tells us ahead of time, and later when we go to our centers with questions we are often dismissed. But we are smart people, a little bit of knowledge is so powerful in making better use of this tool.

    [HF] Are you working on a new book?
    [KB] Isn't that like asking a woman in the delivery room if she's planning on having another baby? [laughs] Actually, there are two books in the works for publishing in 2010. One is called "Nurturing Neighbors" and it is a support group leader handbook. The other is the "I Heart DIET Cookbook."

    Ham & White Bean Soup

    Delicious!

    1 Tablespoon canola oil
    2 Tablespoons butter, unsalted, divided
    1 large onion, chopped
    1 shallot, chopped
    3 stalks celery, sliced
    3 large carrots, diced
    1 teaspoon You Have Arrived Savory Provence Seasoning Blend
    1 pound cooked ham, trimmed and cubed
    3 (15-ounce) cans Great Northern beans, canned, drained and rinsed
    1 (32 ounce) box chicken broth, reduced sodium
    1 bay leaf
    ground black pepper, to taste

    In a large heavy stockpot or Dutch oven heat the canola oil and 1 tablespoon of butter over medium-high heat. Add the chopped onion, shallot, celery, carrots, and You Have Arrived Savory Provence Seasoning Blend. Cook and stir for about 10 minutes, or until vegetables are tender. Add the diced cooked ham, the drained and rinsed Great Northern beans, and bay leaf. Reduce heat to a slow simmer and cook for 20 minutes for flavors to marry. Remove from heat. Add remaining 1 tablespoon butter and season with pepper, do not add salt. Remove bay leaf. Serve warm, 1 cup per person.

    a bit under the weather

    hey Neighbors -- I'm not ignoring the Neighborhood, emails or PMs. I'm just feeling pretty lousy and hanging-out like a lump on the couch. I think I have food-borne illness since eating a deli lunch of questionable freshness yesterday. Jim thinks the stress of the last few weeks has whipped-a** on my little body and I just need to chill-out and rest. HA! I'm sipping copious amounts of Emergen-C and resting best I can. I really need to get feeling better soon. KeepHerKitty is home with me, not feeling so chipper herself:

    Exciting Personal News: I learned this week I get to be the custodian of my beloved grandmother Florine's dining room set. My grandmother was a goddess of entertaining, including a stint in Washington DC hostessing political powerhouses and a lifetime of grandly hosting her cherished family. I am wigged-out excited for this because of the history of this family heirloom, but also because we gave our dining set to our son last year and have not replaced it! This year we can eat Thanksgiving at the family table. (Last year we ate off paper plates sitting on crates of 5DPT books!).

    Speaking of Grandma Florine, for years she hosted Gingerbread House party for oodles of aunts, uncles, cousins, and kin. Grand family tradition. Grandma passed in April 2007 and the following holiday season I honored her by replicating her childhood home in Gingerbread:



    This year I will honor the LivingAfterWLS Neighbors by making & donating on your behalf a Gingerbread House to our local Relay for Life Festival of Trees. I want to include our rainbow and penguins --- any other suggestions? If you've heard me speak about the Emperor Penguins you understand the connection.

    The Gingerbread House featured above is still presentable -- I preserved it and I can hardly wait to make it the centerpiece on my Grandma's table... I think she would be pleased.

    Lemon Broccoli Chicken - 20 Minute Recipe


    Oh does this look yummy! I found this recipe on the label for Campbell's Condensed Cream of Broccoli Soup! A side dish of steamed broccoli with a squeeze of lemon would make a perfect meal! Here's the details:

    Lemon Broccoli Chicken
    Ingredients:
    1 Lemon
    1 tablespoon vegetable oil (I'd use canola)
    4 skinless, boneless chicken breast halves
    1 (10.75 ounce) can Cream of Broccoli Soup
    1/4 cup milk
    Salt and Pepper

    Directions:
    Cut 4 thin slices of lemon. Squeeze 2 teaspoons juice from remaining lemon into a small bowl.
    Heat oil in skillet. Cook chicken 10 minutes or until browned.
    Add Soup, milk, lemon juice and salt and pepper. Top with lemon slices. Heat to a boil. Cover and cook over low heat for 5 minutes or until chicken is done. Serve warm.

    Oven Baked Porcupine Meatballs

    Hello Neighbors!

    Last night I posted this picture to Facebook: Dinner of Oven Baked Porcupine Meatballs. The recipe is featured in my new book, Day 6: Beyond the 5 Day Pouch Test, on page 179. But since the book is a bit behind schedule and so many of you have already ordered I'm offering up the recipe here today! These meatballs are super delicious and actually quite easy to make. I served them with baked butternut squash and heated store-bought gravy. There is just enough rice to get a nice "bite" without going carb-crazy. I hope you enjoy.     Oven Baked Porcupine Meatballs

    This recipe reminds me of the great casserole foods from the 1970's. My mom made the meatballs with the rice mixed in with the meat. But rolling the meatballs in the pre-soaked rice gives the meatballs more bite without overindulgence in starchy carbohydrate. Any ground meat will work in this recipe, but if you use ground chicken or turkey be sure to add a small amount of olive oil or other fat so the meatballs are succulent.

    Ingredients:
    1 cup white rice
    Cooking spray
    1 pound ground veal
    1 Tablespoon rice wine vinegar
    1 bunch green onions, minced
    1/2 cup water chestnuts*, canned, drained, diced
    1 Tablespoon cornstarch
    1 egg white, lightly beaten
    1 teaspoon sugar
    1/2 teaspoon sesame oil
    1 teaspoon salt
    1/4 teaspoon white pepper
    Soak rice in hot tap water in a large bowl while preparing meat mixture. Line a large baking sheet with foil and place baking rack on top so that fat will drip through rack to foil lined sheet. Spray rack with cooking spray. Set aside.

    Preheat oven to 350°F.

    Combine ground veal, rice wine vinegar, green onions, diced water chestnuts, cornstarch, egg white, sugar, sesame oil, salt and pepper. Mix well. Form into 24 evenly sized meatballs. Drain rice in a sieve and transfer to a shallow dish. Roll each meatball in rice to coat and place 1-inch apart on baking rack. Bake in preheated oven for 18-22 minutes or until meatballs are done. Serve warm.

    Serves 6, 4 meatballs each. Per serving:243 Calories; 6g Fat; 18g Protein; 28g Carbohydrate; 1g Dietary Fiber.

    *Water chestnuts are the edible tuber of a water plant found in Southeast Asia. They are bland with a hint of sweetness and valued for the crunch they add to stir-fried dishes.
